What You’ll Need to Make It: Ingredients
- 1 Red Bell Pepper, diced
- 1/4 cup Sweet Onion, chopped
- 1 lb Tofu, extra firm, drained and crumbled
- 4 cups Spinach, chopped
- 1/2 cup Basil Leaves, chopped
- 2 tsp Chili Powder
- 1 tsp Cumin, ground
- 1/2 tsp Turmeric
- Hot Sauce (optional)
How to Make:
- Prep:
- Dice the pepper, chop the onion, and chop the spinach.
- Drain and crumble the tofu.
- Make:
- In a bowl, mix crumbled tofu with chili powder, cumin, and turmeric. Massage until spices are well incorporated. Set aside.
- Lightly oil a sauté pan, add onions and peppers, and sauté until soft.
- Add tofu and cook until warmed through about 5 minutes.
- Stir in spinach and basil, season with salt to taste.
- Top with hot sauce if desired.
